Flavor & Fermentation:
The herrings are caught during spawning season in spring, brined to begin fermentation, only then they are canned and allowed to ferment further—developing that signature pungent, tangy flavor. But one has to be careful to store Surstromming in low temperature otherwise the fermentation process accelerates. The fish in this situation can dissolve.
Cultural Tradition:
Surströmming is both a culinary and social tradition in Sweden. Opening a can is often part of a communal “premiere” event—typically the third Thursday of August—held outdoors due to the intense aroma.
Serving Suggestions:
Best enjoyed with Swedish flatbread (tunnbröd), boiled potatoes, sour cream, chopped onions, and sometimes tomato or dill—balancing the strong flavor with creamy and mild accompaniments.
